Fluffy buttermilk waffles perfect for brunch
Ingredients
Scale
- 2 cups flour
- 1 tbsp sugar
- 1.5 tsp baking soda
- 1 pinch salt
- 1.75 cups buttermilk* (see notes)
- 1/4 cup butter (melted and cooled)
- 2 each eggs
Instructions
- Mix dry ingredients in a large bowl
- Separate eggs. Whisk egg yolks, buttermilk, and butter in a small bowl
- Add wet ingredients to dry and stir just to combine
- Beat egg whites until soft peaks form
- Fold egg whites into waffle batter until combined. Do not over mix
- Heat waffle iron and grease lightly with butter or oil
- Scoop 1/2 cup batter (depending on size of waffle iron) and let cook for 3-5 mins
- Serve with desired toppings
Notes
*you can make buttermilk with dairy free milk by adding 2 tbsp fresh lemon juice and letting it sit
