Description

Fluffy buttermilk waffles perfect for brunch


Ingredients

Scale
  • 2 cups flour
  • 1 tbsp sugar
  • 1.5 tsp baking soda
  • 1 pinch salt
  • 1.75 cups buttermilk* (see notes)
  • 1/4 cup butter (melted and cooled)
  • 2 each eggs


Instructions

  1. Mix dry ingredients in a large bowl
  2. Separate eggs. Whisk egg yolks, buttermilk, and butter in a small bowl
  3. Add wet ingredients to dry and stir just to combine
  4. Beat egg whites until soft peaks form
  5. Fold egg whites into waffle batter until combined. Do not over mix
  6. Heat waffle iron and grease lightly with butter or oil
  7. Scoop 1/2 cup batter (depending on size of waffle iron) and let cook for 3-5 mins
  8. Serve with desired toppings

Notes

*you can make buttermilk with dairy free milk by adding 2 tbsp fresh lemon juice and letting it sit
