Best Buttermilk Waffles

Fluffy buttermilk waffles perfect for brunch

Ingredients
  

  • 2 cups flour
  • 1 tbsp sugar
  • 1.5 tsp baking soda
  • 1 pinch salt
  • 1.75 cups buttermilk* see notes
  • 1/4 cup butter melted and cooled
  • 2 each eggs

Instructions
 

  • Mix dry ingredients in a large bowl
  • Separate eggs. Whisk egg yolks, buttermilk, and butter in a small bowl
  • Add wet ingredients to dry and stir just to combine
  • Beat egg whites until soft peaks form
  • Fold egg whites into waffle batter until combined. Do not over mix
  • Heat waffle iron and grease lightly with butter or oil
  • Scoop 1/2 cup batter (depending on size of waffle iron) and let cook for 3-5 mins
  • Serve with desired toppings

Notes

*you can make buttermilk with dairy free milk by adding 2 tbsp fresh lemon juice and letting it sit
