Best Buttermilk Waffles

buttermilk*

butter
melted and cooled

eggs
Instructions
Mix dry ingredients in a large bowl
Separate eggs. Whisk egg yolks, buttermilk, and butter in a small bowl
Add wet ingredients to dry and stir just to combine
Beat egg whites until soft peaks form
Fold egg whites into waffle batter until combined. Do not over mix
Heat waffle iron and grease lightly with butter or oil
Scoop 1/2 cup batter (depending on size of waffle iron) and let cook for 3-5 mins
Serve with desired toppings
Notes
*you can make buttermilk with dairy free milk by adding 2 tbsp fresh lemon juice and letting it sitÂ
