Homemade healthy muffins, but make it spooky for a fun halloween themed snack! A classic spin on my baby spinach banana oat muffins, with a little holiday magic. Made with no unnecessary additives or ingredients, refined sugar free, and a nutrient boost with spinach (and trust me, your toddlers won’t even taste it), these are sure to be the perfect addition to a lunchbox or snack for your little one this halloween season! Bonus: they come together in 25 minutes and all in one blender for even the most inexperienced bakers. (Make these at the start of the week, and freeze half without the topping for convenient snacks or lunchbox options).
MAKE IT BABY FRIENDLY: baby under 12 months? This is a great option for baby led weaning as well, just don’t add the toppings (eyes/chocolate)!

WHAT YOU NEED
Flour: base of the muffin
Oats: base of the muffin, easy to make by throwing oats in your blender with everything else
Baking soda/powder: for rising
Cinnamon: for flavour
Banana: make sure its very ripe, this is the where sweetness comes from
Spinach: for a nutrient boost and makes the muffins green
Eggs: for binding
Milk of choice: whatever you prefer, cow or plant based
Applesauce: makes muffins extra soft, replaces oil/butter, adds sweetness

Optional: candy eyes and melted semi sweet chocolate give these muffins the extra “monster” look!

STORAGE
Muffins will last up to 3 days in an air tight container on the counter or in the fridge. Alternatively, they can be frozen for up to 3 months without the topping, allow to thaw fully before consuming (a great way to have easy access to snacks, freeze half the batch and pull them out when you need them).

Toddler Monster Muffins

Healthy and simple toddler spinach muffins with a halloween twist!

Ingredients
  

  • 3/4 cup flour
  • 1/2 cup rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 egg
  • 1/4 cup milk of choice
  • 1/3 cup applesauce
  • 1/2 cup spinach
  • 1 banana very ripe

OPTIONAL TOPPINGS

  • 1/4 cup melted dark chocolate (we like the enjoy life brand for kids)
  • 1 handful candy eyes

Instructions
 

  • Heat oven to 350 and line a muffin tin with muffin liners or grease well.
  • Add oats to high speed blender, blend until smooth.
  • Add all remaining ingredients to blender and blend on high until smooth.
  • Fill muffin liners 3/4 full with muffin mixture.
  • Bake at 350 for 15-18 minutes.
  • Allow to cool. Optional: add candy eyes and drizzle with melted dark chocolate.
  • Store in airtight container or freeze (see storage instructions above).
