One of my all time favourite holiday recipes, my family has been making these cookies for 4-5 years now (I can’t remember exactly how long) but they’ve become one of our staples for Christmas baking. I personally am a huge eggnog fan, so if you are too you HAVE to try these!

Ingredients:
Cookies:
1 cup butter
2 cups sugar
1 cup eggnog
5 & 1/2 cups flour
1 tsp baking soda
3/4 tsp nutmeg

Icing:
1/4 cup butter
3 cups icing sugar
1/3 cup eggnog

Method:
1. Heat oven to 375°F
2. Cream butter & sugar until fluffy
3. Beat in eggnog
4. In a separate bowl, combine dry ingredients
5. Add dry ingredients to wet GRADUALLY, mix well (it gets quite thick, you may have to use your hands near the end)
6. Divide dough into 4 equal parts and roll into log shape
7. Refrigerate dough for a few hours
8. Choose: cut roll into 1/4 inch slices and place on baking sheet
OR roll dough into small balls, press down with back end of spoon and place on baking sheet
9. Bake for 8 minutes, DO NOT OVER BAKE, tops will remain white but bottoms will brown
10. Beat butter for icing, add in icing sugar and eggnog slowly until combined
11. Cool cookies & then top with icing
