I’ve been on a mission to make some of my toddlers favourite packaged snacks at home. They absolutely love these oat based cookies I buy, so this is my version. My boys both devoured these, and I have been making them on repeat ever since. Such a great on the go snack to have on hand!
Mini Oat Cookies
Toddler friendly mini oat cookies for an easy snack!
Ingredients
- 1/4 cup butter melted
- 1 each egg
- 1 tsp vanilla
- 1/4 cup coconut sugar
- 1/2 cup organic oats
- 1 cup organic whole wheat flour or sub all purpose
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup mini dark chocolate chips I use enjoy life brand
Instructions
- Heat oven to 350. Line baking sheet with parchment paper.
- Beat the melted butter, coconut sugar and vanilla together. Add egg and mix well.
- Add oats, flour, baking soda, and baking powder. Stir to combine, do not over mix. Fold in chocolate chips.
- Roll into small balls (about half the size of a regular cookie scoop), place on pan and push down slightly with the back of a spoon.
- Bake 5-6 minutes. Allow to cool.
Notes
Keep at room temperature in air tight container for up to 3 days.Â
