I’ve been on a mission to make some of my toddlers favourite packaged snacks at home. They absolutely love these oat based cookies I buy, so this is my version. My boys both devoured these, and I have been making them on repeat ever since. Such a great on the go snack to have on hand!

Mini Oat Cookies


Description

Toddler friendly mini oat cookies for an easy snack!


Ingredients

Scale
  • 1/4 cup butter (melted)
  • 1 each egg
  • 1 tsp vanilla
  • 1/4 cup coconut sugar
  • 1/2 cup organic oats
  • 1 cup organic whole wheat flour (or sub all purpose)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup mini dark chocolate chips (I use enjoy life brand)


Instructions

  1. Heat oven to 350. Line baking sheet with parchment paper.
  2. Beat the melted butter, coconut sugar and vanilla together. Add egg and mix well.
  3. Add oats, flour, baking soda, and baking powder. Stir to combine, do not over mix. Fold in chocolate chips.
  4. Roll into small balls (about half the size of a regular cookie scoop), place on pan and push down slightly with the back of a spoon.
  5. Bake 5-6 minutes. Allow to cool.

Notes

Keep at room temperature in air tight container for up to 3 days.
