More homemade snacks for Grayson, yay! These little mini muffins are perfect for baby led weaning because:

  • They’re easy for tiny hands to hold
  • There is no added sugars
  • They can be made in big batches & frozen for convenience

Notes: this recipe includes applesauce, this is meant to replace oil/butter in the recipe. Homemade is very simple, but store bought is just fine as well (make sure it’s pure applesauce with no added sugar)

Ingredients:

  • 2 ripe bananas
  • 1/3 cup applesauce
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup oats
  • 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon

Directions:

  1. Preheat oven to 350°F
  2. Mash bananas in large bowl or in mixer
  3. Add applesauce, egg, and vanilla. Mix well
  4. Grind oats in a blender or food processor until a flour consistency forms
  5. Add oat flour, flour, baking soda, baking powder, and cinnamon to a bowl and stir
  6. Add dry ingredients to wet, mix until just combined
  7. Lightly grease a mini muffin pan, by greasing the tin you can avoid using muffin liners
  8. Fill muffin holders 3/4 full
  9. Bake for 13-15 minutes, until an inserted toothpick comes out dry

Store in airtight container for 2 days, or in the freezer for up to 3 months.
