The instant pot might be one of those things where you don’t understand all the hype until you ACTUALLY GET ONE. You guys, I just got mine and I’ve probably used it at least once a day for the last two weeks. Get one.

Ever had the sous vide egg bites from Starbucks? They’re sooo good, so I had to try out the recipe in my instant pot when I found out you could buy silicone egg molds. This is such an easy breakfast for busy days, and the added bonus is you can also make it for your babies/toddlers too!

This recipe is also very versatile, you can put in basically anything you want, just chop it up into small pieces!

Here are some ADD IN IDEAS:

  • Veggies: broccoli, mushrooms, spinach, kale, peppers, jalapeños
  • Meat (pre cooked): bacon (pork, turkey, or chicken), sausage, ham
  • Other: cheese, salt, pepper, hot sauce

BABY FRIENDLY: if you’re making these for baby, make sure you don’t use veggies/meat that will pose a choking hazard, and do not add salt. I’ve made these twice for Grayson, the first time I did spinach with a bit of dill, and the second time I did broccoli and cheese.

Ingredients:

  • 3 eggs
  • 2/3 cup egg whites
  • Optional add ins (see above)

*THIS RECIPE YIELDS 7 EGG BITES (one silicone mold)

Method:

  1. Chop additional add ins into small peices
  2. Whisk eggs and whites in a measuring cup (or something easy to pour out of)
  3. Add optional spices
  4. Pour egg mixture into silicone egg molds, filling each 3/4 full
  5. Add desired toppings to egg molds
  6. Add 1 cup water to instant pot
  7. Place cover over silicone mold and then place mold on top of instant pot steam rack, slowly lower into the instant pot using the steam rack handles
  8. Close lid to instant pot and make sure valve is in sealing position
  9. Use the “pressure cook” option on high and set for 10 minutes
  10. Once cooked, allow to naturally release for additional 5 minutes before releasing pressure from valve
  11. Cool and keep in fridge for up to 3 days. Gently warm in microwave for 30 seconds if desired.
